Baked Tofu with Hummus is this week’s healthy recipe idea for What’s for Dinner? Wednesday.  I guess you can say I’ve been bit by the tofu bug.  I’ve always been intrigued by tofu, but ever since I baked tofu lasagna two weeks ago, it’s the only thing I want to cook.

It’s safe to say that the world of tofu has come a long way since I first heard about it some ten or so years ago. There are so many recipes for all kinds of tofu dishes. It’s almost enough to make me want to become a vegetarian. I say almost, because I’m one of those weird girls who really craves a burger every once in a while and don’t really think I could give that up!

So let’s get back to the baked tofu recipe at hand, shall we? I adapted it from a recipe I found over at Namely Marly that’s worth checking out if you have time because she also has a DIY hummus recipe.  I was so eager to see what baked tofu with hummus tasted like that I didn’t try it myself, but I will.  Plus, I also happen to have a ton of hummus leftover now that Central Market stopped carrying my favorite pita bread 🙁 I really don’t know why they did that. I went through at least 3 bags a week at one point, so I think I was more than carrying my pita buying weight! But, I digress. The point here is that I didn’t have time and already had enough hummus on my hands so I couldn’t really replicate Namely Marley’s baked tofu with humus recipe.

The version here is my own and not as DIY.   It’s quicker, yes, but I do want to try out that hummus recipe. I mean, I’m going to have to learn how to make my own pita bread now so might as well learn to make hummus too, right?

Intrigued as I was about baking hummus? Here’s what you’ll need to bring the dish to life and serve it to four:

Ingredients:
32 oz extra Firm Tofu
2 tbsp apple cider vinegar
3/4 cup water
1.5 tbsp rosemary
2 tsp dried thyme
2 tsp dried sage
1 cup hummus ( I used roasted red pepper, but pick your fave!)
Bag of your favorite salad greens

Putting it all together:

Step One: Marinade your tofu.  Sound strange? You are going to have baked tofu so why not marinade it?  Cut your tofu into 1 inch chunks and drain out any excess fluid and then place it in a 9 x 13 in pan.  Add in the marinade ingredients, everything else on your shopping list except the hummus.  Let the tofu and marinade sit for 30 mins to mingle.

Step Two: Prep and bake your tofu. Preheat your oven to 350 degrees Fahrenheit and while you’re waiting, cover your tofu with your final ingredient, hummus!  Coat each tofu piece as much as possible.

Step Three: From “raw” to baked tofu. Pop that pan in the oven and bake your tofu for 30 mins. 

Once that buzzer beeps, get ready for a delicious treat and to feel inspired.  Who knew you could bake hummus on your tofu? It was definitely a yummy yummy in my tummy surprise to me 🙂 Arrange your baked tofu on a bed of greens to serve to your guests.
