Recipe for Swiss Chard Topped with Tofu

It happened again! Our Swiss chard outgrew its pot on our balcony. That meant I had no choice but to find a recipe for Swiss chard for all of us to enjoy. Since I shared a non-tofu recipe with you last week, I decided to go back on my tofu kick and cook up a recipe that included some of the soy product as well (sorry, Eileen!).

This week’s recipe for Swiss Chard Topped with Tofu was modified from one I found on my favorite cooking website, Clean Eating Magazine and I think you’re going to really enjoy it, even if you don’t have a Swiss chard plant in need of some taming.

Why do I think you’ll love it? Well, for starters this dinner will be done in 20 mins or less. For most of you I think that fact can also count as my “for finishers” comment (or whatever those who know English better than I do would say).  In keeping with the quick timeline of this meal, let’s get to it with your ingredients list:

Ingredients* to Serve Swiss Chard Topped with Tofu to Four: 

32 -oz extra-firm tofu
3 tbsp pure maple syrup or raw honey
3 tbsp Dijon mustard
3 tbsp fresh lemon juice
1 tsp smoked sweet paprika
Pinch ground cayenne pepper
Olive oil cooking spray
20 oz Swiss chard, chopped
2 cloves garlic, minced
salt and fresh ground black pepper, to taste
2 oz low-fat feta cheese

Putting it all together:
Step One: Preheat your oven’s broiler and place your oven rack up top.
Step Two: Drain the water out of your tofu.  Get it done by placing your tofu on paper towels and pressing firmly. If you want to multi-task, sandwich your tofu between two layers of paper towels and put a heavy pan on top.
Step Three: Create your tofu glaze.  Mix together all remaining ingredients through the cayenne pepper in a bowl to make your glaze.
Step Four: Cut and glaze your tofu. Cut your tofu into 1/2 inch thick strips and toss it in the the glaze mix.  Once it’s good and glazed, place your tofu on a baking sheet covered with parchment paper.  Add one more coating of glaze to the top before placing it in your oven to broil for 8 to 10 mins. Halfway through, flip your tofu “steaks” and add the last of the glaze.
Step Five: Cook up that chard. Mist a pan with cooking spray and heat it to medium-high. Add your Swiss chard and then your garlic.  Stir both together for three minutes or until your chard wilts.  
Step Six: Create your masterpiece. Divide the Swiss chard evenly among four plates. Top it with 1/4 of your feta cheese and 1/4 of your tofu.
Try to enjoy a piece of Swiss chard, tofu, and feta with every bite to get the full effect.
