If I hadn’t discovered this awesome website that offers a compilation of recipes from all over the web that are searchable by ingredients, I’d likely never stray from testing my favorite Clean Eating recipes!

Luckily for you and our pantry, Yummly has become my second favorite website.

Why is my pantry lucky?

Well, we seem to have an overabundance of ingredients in there right now! Whenever this happens, my hubby always challenges me to find a recipe to use up some of the ingredients.

This week’s recipe was able to knock out two pantry real estate hogs at once: canned salmon and couscous.

If you have a pantry crisis or an affinity for salmon and/or couscous, I hope you’ll try it out 🙂

Here’s what you’ll need to serve four:

1 cup water
2 cloves garlic, minced
2/3 cup tri-color couscous
1 14 3/4 – oz can salmon, drained, flaked, and skin and bones removed*
2 cups baby spinach leaves
1/2 cup red sweet peppers, chopped
1/3 cup tomato bruschetta topper
2 tablespoons toasted almonds
*After testing this out, we’d recommend using fresh salmon

Here’s how to put it all together:

Step One: Microwave your water and garlic in a 2 quart container on high for 2-3 mins or until the mixture comes to a boil.

Step Two: Remove your casserole dish and stir in the couscous and cooked salmon.  Cover the dish and let it stand for 5 minutes.

Step Three: Add all remaining ingredients besides the almonds to the mix and stir it up so everything is mixed evenly.

Step Four: Serve the dish with your toasted almonds on top.

As mentioned in the starred note above, you might want to use fresh salmon for this recipe. If you have canned salmon to use up, try out THIS yummy recipe for Krabby aka Salmon patties instead. It tastes a lot less fishy, but is still quick and easy to make.
