What’s for dinner? Wednesday

It’s Wed-nes-day (that’s how we remember how to spell it) again!  That means it’s “What’s for dinner? Wednesday.”  Today we have something for our vegetarian friends:  Cauliflower Pizza Crust.  We’ll give you the recipe for the crust, you can pick your toppings.  Here are the details:

Ingredients (for one personal sized pizza):

1 cup cauliflower
1 large egg
1 cup cheese (parmesean/cheddar/mozzarella-your choice)
1/2 tsp fennel seeds
1 tsp oregano
2 tsp dried parsley
+ Your favorite toppings  

How to make your crust: 

Step One:  Put your cauliflower in your food processor and process it until it looks like snow (you know, that fluffy stuff that us Houstonians rarely see).  While admiring the result and wondering if you’d rather make a snow angel or snowman on your kitchen floor, preheat your oven to 450 degrees (don’t worry, this “snow” won’t melt).  If you have extra cauliflower and kids or “kids” that bug you while you cook, challenge them to make a cauliflower sculpture (check out some of the crazy ones on Pinterest if you don’t have a clue what we mean). 

Step Two: Beat the egg in a bowl and add the cauliflower snowflakes and your shredded cheese. Mix these ingredients up and form them into a “dough.”

Step Three: Spread your “dough” out onto a pizza pan sprayed with cooking spray and sprinkle it with your spices. Bake at 450 for 12 to 15 minutes.

Step Four: Add your favorite pizza toppings and pop your pizza back into the oven until the cheese has bubbled slightly (or it browns on the edges).

Step Five: Enjoy and tell your kids or “kids” to stop playing with their food (if they took on the challenge from Step 1).
