Dinner is served! Spaghetti Squash with Chipotle Meat Sauce
This week’s healthy dinner recipe just got served! Today’s recipe, Spaghetti Squash with Chipotle Meat Sauce was a big hit at the Fit Armadillo house. My husband loved it (probably because it’s got a little kick to it-he’s Indian, after all!) and while it took a few dangerous knife auditions for me to realize that it was best to cut the squash open after it was cooked, it was a pretty easy meal to put together.
Easy and fun. Once you cut out (pun intended) the fact that the squash is dangerously hard to break into raw, you get to enjoy all the fun of scrapping out bits of the veggie into spaghetti like strands. It’s pretty much the most fun I’ve had prepping a meal in a long time!
