I don’t know about you, but I love pizza night!  Before this week’s dinner my favorite pizza recipe was one I found for Argentinian Flatbread. After making this week’s dinner I’m having trouble deciding which one I like more!

The recipe I’m sharing with you is modified from one I found in Clean Eating Magazine.  Instead of making one large pizza, this recipe has you make 8 mini pizzas.  I love mini food items so that was definitely a selling point for me.  The use of balsamic vinegar gives the pizzas that added something special that make them taste more gourmet than most build your own pizzas.

Here are the ingredients you’ll need to serve this meal to 4 people:

1 lb pizza dough
1/2 cup balsamic vinegar
Olive oil cooking spray
4 oz top sirloin steak
pinch of sea salt
pinch of ground black pepper
1 yellow onion, cut into thin slices
2 cups arugula
1.5 tbsp crumbled blue cheese

How to put it all together:

Step One: Set your oven to 450 degrees Fahrenheit.  Divide your pizza dough into 8 smaller balls of equal size (unless you want one of your dinner guests to be jealous that your pizza is bigger, then make them whatever size you please!). Smash each ball of dough with your hand to release some stress and to flatten the dough out.  Aim to have each mini pizza about 1/4 inch think.

Step Two: Line a baking sheet with parchment paper and place your mini pizzas in the oven to bake for 10 minutes.

Step Three: Prepare your toppings! While you’re waiting for your pizza crusts to get crispy, pour your balsamic vinegar into a pan and cook it on medium-high heat.  Once the vinegar starts boiling, reduce the heat to medium-low.  Keep an eye on your vinegar and stir it occasionally until it’s volume is reduced to half (this will take about 10 mins-the same time it will take your pizza to bake). While you heat up the vinegar, cook your steak.  After you season it with salt and pepper on both sides, cook it in a pan warmed to medium heat for about 5 mins per side.  The steak, vinegar and pizza crusts should be done at about the same time.  When they are done, remove them from the oven or stove and proceed to step four.

Step Four: Cook up your onions.  Add your onions to the pan where you cooked your steak and stir them around until they are a nice golden brown color.

Step Five: Get your pizzas ready for their last trip to the oven.  Thinly slice the steak against the grain.  Top your mini pizzas with the onion, arugula, steak, and cheese before drizzling the vinegar on top.  Put your pizza back into the oven for a final 2 minutes. Take them out when the cheese has melted a little and the crust looks nice and crispy.

These pizzas are SO delicious and since they are mini you can have two all to yourself 🙂
