Gnocchi and Shrimp with Spinach for What’s for Dinner? Wednesday
Happy What’s for Dinner? Wednesday! This week’s meal is a masterpiece of my own creation: Gnocchi with Shrimp and Spinach. If you visit my blog each week, you know that 99.9% of my meal ideas are modified from those made by other chefs. In fact, the only other recipe I made up all on my own was the one I shared for Salmon Kale Salad a few weeks back.
However, this week when I went to buy my groceries I saw that gnocchi was on sale and I was immediately inspired to cook up a new masterpiece (although I’m sure my hubby thinks of it more like a mess-terpiece, but you know what they say, “beauty is in the eye of the beholder!”). Even though I’m part Italian, I never had gnocchi until earlier this past year when I tried out a recipe for it this January. The result? It was basically love at first taste! I mean how could you not love these little mini pasta kisses?
So I grabbed a few boxes of gnocchi and got home to get to work on my plan for the ultimate mess-terpiece…er…masterpiece: Gnocchi and Shrimp with Spinach.
Here are the ingredients I used to serve four:
1 package tri-colored gnocchi
olive oil cooking spray
1 bag spinach (3 cups)
1lb shrimp
1 cup roasted red pepper pasta sauce
1/4 cup parmesan cheese
pinch of pepper
Here are the steps I used to make it:
Step One: Boil a pot of water for your gnocchi. While you are waiting for the water to heat up, cook your spinach. Heat up a pan on medium-high heat and spray it with olive oil cooking spray before pouring your bag of spinach on top. It will take about 3 mins for the spinach to wilt. When it does, take it off and set it aside.
Step Two: Cook your gnocchi and shrimp. Add your gnocchi to your pot of water and cook your shrimp while you keep an eye on it. Spray another pan with olive oil cooking spray and cook your shrimp on medium-high heat until they are done. This will be about 4 mins or less. Fun tip: If your shrimp look like the letter “C” they are cooked, if they look like the letter “O,” they are overcooked 🙁 Stir in your pasta sauce once your shrimp are cooked and lower the heat to low to warm up the sauce.
Step Three: Put it all together! Once your spinach, gnocchi, and shrimp are cooked all you have to is unite them. Pour all three into a bowl and sprinkle pepper and parmesan on top.
