My Top 3 Fourth of July Healthy Recipe Ideas
Happy What’s for Dinner? Wednesday! This Wednesday I’m en route to one of my favorite places in the world, Block Island, Rhode Island, to celebrate the Fourth of July. I’m so excited for this vacation!
Block Island has a special place in my heart for many reasons. My family would spend the Fourth of July on Block Island when we were growing up and I have a lot of special memories from those vacations. More recently, my hubby proposed on the rock pier there some 4 years ago yesterday (!) and I was even lucky enough to convince him to have our wedding on the island. Needless to say, I won’t be cooking tonight! However, I didn’t want to leave you hanging as you head into the long weekend. Since I can’t share a new recipe and cook alongside you, I decided to round up some of my favorite healthy recipes from the past year that I think would be perfect for your Fourth of July celebration.
Healthy Recipe Idea #1: Lobster Rolls
As you may have guessed from my favorite summer vacation destination, I’m a former New England girl. When summertime comes around in my native state of Connecticut (or pretend native state of Rhode Island-I’m a big beach bum and CT has nothing on RI when it comes to the beach), lobster and hot dog buns get together to bring us delicious lobster rolls.
The problem with most store brought lobster rolls, however, is that they are usually drenched in mayo. This makes them less than healthy and my tummy angry when I try to eat one. I don’t know about you, but when it’s hot out I rarely have a big appetite. This salad is a great option for the summer, because you can serve it cold and it’s chock full of nutrients.
