Tandoori Tofu
What’s for Dinner? Wednesday: Tandoori Tofu
This week I’m back to my tofu cooking tricks with a recipe for Tandoori Tofu (the idea did NOT fly with my visiting chef last week)! The recipe I’m sharing with you has been modified from one I found over on Eating Well. The fact that my hubby is Indian came in pretty handy this week as I had all the spices right in my pantry! This recipe is super healthy and easy to make.
Here is what you’ll need to serve four:
1tbsp paprika
1 tsp salt, divided
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
olive oil cooking spray
2 tbsp minced garlic
juice of 1 lime
28 oz extra-firm tofu, drained
2/3 cup Greek yogurt
6 tbsp chopped cilantro
Here’s how to put it all together:
Step One: Prepare your spicy mix. Put your paprika, 1/2 tsp salt, cumin, coriander, and turmeric in a small bowl and mix them together.
Step Two: Spicify (hey, if doncha and cray are words, spicify should be one too!) your garlic. Heat a skillet sprayed with cooking spray over medium heat. Add your garlic, spicy mix and the juice of one lime to the skillet. Stir it up for about 1 minute or until your spicified garlic sizzles. Then, remove the skillet from the burner and the spiced garlic from the skillet.
Step Three: Tofu time! Cut your tofu into 1/2 inch slices (if you didn’t remove the water yet, do that first!). Brush your mix of spicified garlic over both sides of your tofu and add a sprinkling of salt to the top (1/2 tsp). Return your skillet to the stove top, spray it with cooking spray, and heat it on medium heat. Cook your tofu for 3 minutes on each side.
Step Four: Dinner time! Serve your tofu with a side of Greek yogurt topped with cilantro and any pieces of garlic that didn’t stick to your tofu.
