Lemon Artichoke Chicken
Earlier this week my favorite Stress Less Coach, Nicole Liloia, shared a photo on instagram of a slice of artichoke dip pizza. I suddenly started craving one of my favorite artichoke recipes of all time.
What recipe was that?
It’s one for Lemon Artichoke Chicken from Clean Eating Magazine. Before trying the recipe a few years back, I didn’t even know I liked artichokes. Now, I’m a huge fan. I hope that by sharing this recipe I can inspire you to start loving this veggie or to find a new way to enjoy it.

Ingredients to Serve Lemon Artichoke Chicken to Four
1/4 cup whole-wheat flour
1/2 tbsp dried oregano
Freshly ground black pepper, to taste
1/4 tsp sea salt
1 lb thin chicken cutlets
Olive oil cooking spray
1/2 tbsp extra-virgin olive oil
1 medium onion, cut lengthwise and thinly sliced
1 clove garlic, minced
1/4 cup low-sodium chicken broth
1 14-oz can artichoke hearts, drained and cut into sixths
1/4 cup fresh lemon juice (about 2 lemons worth)
1 tsp lemon zest
2 tbsp fresh parsley, chopped, for garnish
Here’s how to put it all together:
Step One: Season your chicken. Grab a shallow bowl and add in your flour, oregano, pepper, and salt. Mix these ingredients until they are combined (shaking works well, but only if you have a cover!). Then, dredge each chicken cutlet in the mixture. Have your chicken cutlets do like Taylor Swift and shake off any excess breading before setting them on a plate.
Step Two: Cook your chicken. Spray a large skillet with cooking spray and heat it to medium high before adding your chicken. Cook each cutlet for 3-5 mins per side so that they are lightly browned. Set your cooked chicken aside.
Step Three: Cook your veggies. Lower the heat on your oven to medium-low and heat your olive oil. Cook your onion in the pan until it is soft and golden (about 5 mins). Next, add your garlic and cook for one minute as you stir constantly. Next, add the chicken broth. Once it is simmering, add all remaining ingredients through the lemon zest and cook for another 2 mins.
Step Four: Put it all together. Pour the artichoke mixture over your chicken cutlets and finally top it all off with your parsley.
This dish is so flavorful, I think you’ll have a hard time believing it’s so healthy!
