Even though it is Wednesday, the day I usually share a healthy dinner idea, I’m going to share a breakfast idea instead.
Has March Madness gone to my head?
Maybe.
But, the real reason I’m sharing this recipe today is that I’ve been feeling pretty guilty the last few days.
Let me explain.
Last week, Adria DeCorte interviewed me for her awesome podcast, Feed Your Hustle (definitely go check it and Adria out, if you haven’t yet!) and she asked me if I had any go-to breakfasts.
While I’ve had a few favorite healthy breakfast recipes over the years, my current go-to breakfast has lasted the longest and is one I eat every.single.day.
And I love it each and every time!
So how does this relate to Adria? Well,….
She asked if I had the recipe on my website and I had to tell her that I didn’t! Even though my healthy pancakes are SUCH an important part of my morning and one of my favorite healthy recipes, I hadn’t shared them with my awesome fans and clients.
So, please accept my apology!
And…the quick and easy recipe for my favorite breakfast of healthy pancakes 🙂
Here are the ingredients you’ll need to whip up a batch:
1/2 cup oatmeal
1/4 cup non fat cottage cheese
1 whole large egg
Cooking spray
1/4 cup of your favorite fruit
1/4 cup of non-fat Greek yogurt
2 tsp of honey
Here’s how to put it all together:
Step One: Make your batter. Place your oats, cottage cheese, and egg into your food processor. Turn it on and process to perfection! Meaning until the ingredients look like any pancake batter.
Step Two: Make your pancakes. Pour your batter onto a pan heated over medium-high heat and sprayed with cooking spray to make your desired number of pancakes. I love having four, but you can decide how many you want. Drop your favorite fruit into the batter (blueberries, raspberries, and cranberries are some of my favorites). Cook your pancakes for about 2 mins on each side as you would any other pancake.
Step Three: Add your finishing touches. Top your pancakes with your Greek yogurt and a squirt or two of honey.
While I hate setting super high expectations, this recipe is pretty darn amazing. It’s even won over my mom. Which was quite a feat after she tried my first healthy recipe idea (let’s just say using up whey protein to try out healthy muffins is not a good idea, if you’re trying to impress someone…in case you’re tempted, use the reminder: Say no way to whey muffins!). My mom also eats these every day now!
