What’s for Dinner? Beef Curry!
Happy What’s for Dinner? Wednesday! I’m almost starting to feel guilty about the small amount of cooking I’ve been doing lately. Last week, I was traveling so I wasn’t cooking. Instead, I shared four of my favorite healthy pizza recipes. If you missed that post, be sure to check it out here. One of the recipes is for a Pumpkin Pizza!
And this week? Well, I’m not cooking either, because Mr. Fit Armadillo really wanted to cook up a bunch of his favorite foods and I didn’t want us to end up wasting food if I cooked another meal (good excuse, right?). Luckily, he picked some healthy ingredients so I’m able to share his masterpiece with you.

Here’s what you’ll need to make this delicious meal:
1 lb skirt steak
1 can low fat coconut milk
1 tbsp turmeric
1 tbsp salt
1 tbsp sugar
olive oil cooking spray
8 oz sliced mushrooms (white or baby bella)
Or course having these ingredients is only one part of the meal. Lucky for you even if you don’t have a Mr. Fit Armadillo of your own, you can get some help! About 90% of the work will be completed by your slow cooker! It’s so easy!
Check out Mr. Fit Armadillo’s SUPER simple directions:
1) Stir fry onion until brown.
2) Add all ingredients into a slow cooker and cook for 4 hours with an additional can of water.
3) Done after 4 hours (that’s a direct quote!).
Serve your final product atop cooked rice or quinoa (shown above). Use 3/4 cup of quinoa per person to keep the total calorie count of this meal under 500.
