Dinner is Served! Avocado and Roasted Red Pepper Gazpacho with Scallops PLUS Asparagus Primavera with Couscous, White Beans, & Champagne Vinaigrette.

Here’s our Soup and Salad dinner from last night!  If you love soup but live somewhere like Texas, this Gazpacho is the perfect way to enjoy your soup without having to turn up the AC.  The Asparagus Primavera Salad recipe we posted will leave you with a big bowl of leftovers you can enjoy as a stand-alone meal.  The asparagus and spinach in the salad give you a healthy dose of folate to boost your energy.  The grains and beans provide a great mix of protein.
