Easy Lemon Chicken Recipe
This week I have an Easy Lemon Chicken recipe for you to try for What’s for Dinner? Wednesday. Inspired by grilling season and my goal of trying to get away from tofu dinners (I’ve been kind of obsessed and amazed by tofu since making tofu lasagna last week), I found the idea for this meal over on The Lean Clean Eating Machine. I’ve kept most of the original recipe the same, but made a few modifications to make it even healthier.
One thing I did to make this easy lemon chicken recipe even easier was to just cook the chicken up in the oven. I’m a little scared of the grill (am I the only one who envisions a huge mushroom cloud explosion if they try to turn that thing on? I hope not!) and it worked just fine when I made the Best Beef Kabobs ever, so I figured it would work for white meat too 🙂 Turns out it did!
Ready for the recipe (for your oven or grill, if you dare!)? Here it is:
Ingredients to Serve Easy Lemon Chicken to Four:
4 chicken breasts cut into 1-inch cubes
4 lemons (2 for garnish, 2 for making lemon juice)
20-30 asparagus spears cut into 2 inch pieces
16 green onions cut into 2 inch pieces
olive oil cooking spray
4 tbsp minced garlic
2 tsp sea salt
1 tsp black pepper
2 tbsp Italian seasoning
1/4 cup finely chopped parsley
Putting it all together:
Step One: Preheat your broiler or preheat your grill to about 550 degrees Fahrenheit and prep your chicken. Once it is cut into 1-inch chunks, you can make your marinade. Mix together the juice of two lemons, garlic, salt, pepper, Italian seasoning, and parsley. Put the marinade and chicken chunks into a 1 gallon bag and shake it up to ensure proper chicken coating.
Step Two: Prep your veggies and lemon slices. Your green onions and asparagus will be cut into 2 inch slices and your lemons will be cut into 1/4 inch or thinner slices. Just be careful of your fingers (I’m saying this more for me that you, I have a history of run-ins with knives)!
Step Three: Skewer assembly time! I use metal skewers because I couldn’t find any wood skewers, but if you have the wooden variety, be sure to soak them in water for at least 10 mins first.Thread your skewers in this pattern: lemon, chicken, 2 asparagus, 2 green onions, REPEAT.
Step Four: Cook ’em up! Spray your grill or oven-safe grill piece (I’m not sure the technical term, but it looks like a grill…) with olive oil cooking spray and put your chicken on top. Cook for about 6 mins per side to ensure your chicken is cooked completely.
