Easy Lentil Soup Recipe

This week for What’s for Dinner? Wednesday, I have an original recipe for you!

It was made by Mr. Fit Armadillo just for us.

And by us I mean all of my readers, but especially for those of you who can’t or don’t like to eat chicken, but still want a way to warm up as you wait for the weather to do so.

It was inspired by the fact that last week I shared a recipe for Slow Cooker Chicken Chili.  Even though this week’s recipe does include turkey as is, you could easily leave it out and still have a filling soup.

Ingredients to Make Easy Lentil Soup:

2 cups of uncooked lentils
5 cups of water
2 cloves of garlic, chopped
1 small yellow onion, chopped
2 tomatoes, chopped
2 thai chili peppers, chopped
1 lb lean ground turkey
1 tsp salt
1 tbsp turmeric
1/2 tsp cumin
1 tbsp sugar
1/2 tbsp red chili powder
1 tbsp olive oil

How to Put It All Together:

Step One: Sauté your onion and garlic until browned.  Then add your tomatoes and turkey.  Continue cooking until your turkey is…cooked (clearly!).  Then, set your pan aside.

Step Two: Put your lentils and water into a microwave safe bowl and cook on high for 20 mins (feel free to do this while working on step one!). 

Step Three: Add your cooked lentils to the pan of goodies from step one and heat them on medium low for 40 mins with all remaining ingredients (or until the lentils have been softened to your liking.

Step Four: Enjoy!
