Grilled Chicken Panini
It’s What’s for Dinner? Wednesday! This week, I’ve finally decided to get out our panini press from our wedding some 3 yrs ago to make a Grilled Chicken Panini. This recipe is super easy and delicious so I hope you’re ready to join in!
Here’s what you’ll need to serve it to four:
8 slices of sourdough bread
16 oz cooked boneless, skinless chicken breast
4 oz grated cheese (your choice of type)
5 tbsp pesto
olive oil cooking spray
Optional:
Side salad ingredients or your favorite soup
Here’s how to put it all together:
Step One: Getting ready. Make sure your chicken breast is cooked. If it’s not, cook it up right now! Then, gather your ingredients.
Step Two: Making your sandwich. Place 4 oz of chicken on top of one piece of sourdough bread and spread 1.25 tbsp of pesto on top of the chicken. Sprinkle 1 oz of your favorite cheese on your pesto-coated chicken before placing another slice of bread on top to make a sandwich.
Step Three: From sandwich to panini! To complete the transformation from ordinary sandwich to grilled chicken panini, spray your heated panini press with olive oil cooking spray. Then, place your sandwich on top and the panini press on top of that. Hold down and press for about one minute before flipping your sandwich so you can get even grill lines. Once the cheese is melted, your sandwich is done!
Step Four: If you are serving your panini with salad or soup, dish them out!
And that’s all! Who says you can’t have sandwiches for dinner? Not me!
