Healthy Lobster Rolls for What’s for Dinner? Wednesday
Happy What’s for Dinner? Wednesday! I have a very special, very delicious recipe to share with you today. As a former New Englander, I have always loved lobster rolls. However, have never really liked mayonnaise. While going through some old Shape* magazines I found this gem of a Healthy Lobster Roll recipe that I had to try. It came out wonderfully! None of the taste of the lobster was hidden by any icky mayo. To make four of your own, grab the ingredients below:
Ingredients for 4 Lobster Rolls:
- One 2 lb, Lobster pre-steamed
- 1 stalk of celery, minced
- 1 tbsp shallot, minced
- 1 tsp olive oil
- 1/2 tsp fresh lemon juice
- 1 tbsp butter, softened
- 4 hot dog buns
Step One: Remove the meat from your pre-steamed lobster. You’ll need a cracker and pick and some patience, but trust me, it’ll be worth it!
Step Two: Prepare your bun’s filling. Chop up your newly earned lobster meat and mix it in a bowl with your celery, shallot, olive oil, and lemon juice.
Step Three: Heat a pan over medium heat. Spread your very minimal amount of butter on the outside of your buns and toast them for 1 minute on each side so that they achieve a nice golden brown color.
Step Four: Stuff your browned buns with your lobster filling and get ready to enjoy a New England classic as it was meant to be enjoyed-fresh fresh fresh!
