Quinoa Cakes: My New Favorite Recipe!
Quinoa Cakes: My New Favorite Recipe!
A few weeks back I discovered a new recipe that I’ve been kind of obsessed with.
If you follow me on social media, you’ve probably seen some pictures of it already and you might have even asked me how to make this yummy meal. Well, I’m finally ready to share my recipe for quinoa cakes with you
If you’re an A-Lister, you already have your ingredients ready and, if not? Well, sign up HERE so you don’t miss out next week.
Then grab these ingredients:
Ingredients to Make 10 Quinoa Cakes (Serves 5)
2 1/2 cups cooked quinoa
4 eggs, beaten
1/2 teaspoons sea salt
1/4 cup chopped fresh basil
1 small white or yellow onion, finely chopped
1/3 cup parmesan cheese, grated
3 cloves garlic, finely chopped
1 cup panko crumbs (plus a few extra tablespoons if needed)
Cooking spray
Mixed greens (optional, but these babies go great over a salad)
Here’s how to put it all together:
Step One: Creating your base. Because it’s all about that bass er…base! Combine the first three ingredients, mix them up, and then add in all remaining ingredients other than your salad greens.
Step Two: Make your patty cakes. Form your mix of ingredients into patties. Use about 1/4 cup of mix for each patty.
Step Three: Cook your patties. Spray a pan with cooking spray and heat it over medium heat. Cook your patties for about 3-4 mins per side or until they are golden brown on the outside.
And that’s all, folks! Super quick and so easy that even a kid whose favorite song is Pat-a-Cake could make it (Well, assuming he/she would be safe around a stove…).
These have quickly become a staple in our house!
