Recipe for Pasta Fagioli
This week’s recipe is for pasta fagioli.
It’s one of my all time favorite recipes that my mom makes and before she put on her Mom Off Duty pin that we gave her for Mother’s Day this weekend, I got her to send it to me 🙂
I send out my recipe ingredients on Sundays to my A-Listers, but if you missed that e-mail, it’s OK. I’ll still share them with you.
What you’ll need to serve pasta fagioli to four:
1 lb lean ground beef
1 can cannellini beans (rinsed and drained)
1 can kidney beans (rinsed and drained)
1 garlic clove (minced)
1 onion (chopped)
1 lg can crushed tomatoes
1 c ditalini pasta (uncooked)
How to put it all together:
Step One: Make your meat and prep your pasta. Spray a pot with cooking spray and cook your ground beef until it is browned. While you are waiting, cook your pasta in a separate pot according to the package instructions. Once your beef is done, remove it and set it aside.
Step Two: Brown your onions. Time for your onions to get in on the browning action. Add them to your pot until they are done, then drain off any fat before proceeding to step three.
Step Three: Put it all together. Add your beef back to the pot along with all remaining ingredients. Mix the ingredients in your pot over a medium-low heat to warm it up.
Step Four: Finishing touches. Your pasta should be done by now. Add it to your pot of beef, beans, and more. Divide up the dish and serve with some grated cheese.
