Slow Cooker Chicken Chili Recipe
Last week was more of a What’s for Breakfast? Wednesday, but this week I’m back to sharing a dinner idea for my weekly healthy recipe post.
So, what’s for dinner this Wednesday?
Well, while spring has sprung here in Houston, TX, I know many of my readers woke up to snow on March 20th. Instead of bragging about the warm weather, I thought I’d be nice and share a recipe that requires minimum work on your part (thanks to your slow cooker!) and that will warm you right up.
The recipe I’m sharing here was modified from THIS one for Chicken Taco Chili.
Here’s what you’ll need to serve Slow Cooker Chicken Chili to 8:
1 chopped onion
1 (16 oz) can of chili beans, rinsed and drained
1 (15 oz) can of black beans, rinsed and drained
1 (15 oz) can whole kernel corn
1 carrot, chopped
1 (8 oz) can tomato sauce
2 (10 oz) cans diced tomatoes with green chilis
12 ounces of chicken broth
1.5 tbsp of chili seasoning
3 whole skinless, boneless chicken breasts
Optional toppings:
1/4 cup cilantro, chopped
1/2 cup shredded reduced fat cheddar cheese
1/4 cup non-fat Greek yogurt
2 oz crushed baked tortilla chips

Here’s how to put it all together:
Step One: After chopping up your veggies and rinsing and draining your beans, place all ingredients besides your chicken breasts into your slow cooker. Stir them all together and then place your chicken on top and press the meat down so that it’s covered by your other ingredients. Cover your slow cooker and set it to cook on low for 5 hrs.
Step Two: The final step!!! Remove the chicken breasts from the slow cooker and let them cool so that you can touch them without burning yourself. Use a fork to shred your chicken before putting it back into the slow cooker to cook for another 2hrs on low. Top it all off with any or all of the toppings from the ingredients list.
I don’t know about you, but my slow cooker is one of my favorite kitchen appliances (my favorite is probably my bread machine!). How can you not love a machine that makes delicious meals with little work on your part?
