Smoked Salmon and Eggs for Dinner
I don’t know about you, but I’m a BIG fan of breakfast for dinner.
So when my hubby challenged me to find a recipe that would use up some of our tortillas, I was pretty pumped to find THIS recipe for a Smoked Salmon & Egg Tortilla!
Chock full of protein, it will definitely fill you up!
This easy dinner would go great over a bed of salad to add in your veggies, too.
Here’s what you need to serve it to four:
4 whole wheat tortillas
12 slices of smoked salmon (8 ounces)
1 sliced avocado
4 handfuls of alfalfa sprouts
8 eggs
Salt and pepper to taste
Here’s how to put it all together:
Step One: Toast those tortillas (and maybe or maybe not say that 5 times fast!). Use your toaster oven or microwave them, if you must.
Step Two: Pretty up your plate. Add 1/4 of the smoked salmon to the top of each tortilla. Next, add your avocado before handing over a handful of alfalfa sprouts per plate.
Step Three: Cook up your eggs. If you’re super skilled, try poaching your eggs. Otherwise, cook them over easy so they are a little runny when you pop ‘em open.
Step Four: Put it all together. Dish out 2 eggs per plate and serve them on top of your tortillas.
And…that’s all, folks!
Breakfast for dinner is served.
