It’s What’s for Dinner? Wednesday again! Last week, I made a custom nutrition plan for myself after hearing one of my clients rave about the recipes on her plan.

Since following my plan, I’ve discovered two awesome new recipes that are easy and healthy. I shared the first, Crab Ceviche, last week. This week’s nutrition plan recipe is for Southwestern Chicken and Quinoa.

Ingredients to Serve Southwestern Chicken and Quinoa to Four:

1/4 cup chopped cilantro
16 oz boiled black beans
8 oz  cooked sweet corn
1/4 tsp cayenne pepper (or more to taste)
1/2 tsp ground cumin
1/4 cup nonfat vegetable broth
1 cup cooked quinoa
1 clove garlic, minced
1/2 cup chopped onion
12 oz roasted chicken breast

How to put it all together:

Step One: Chop up any ingredients you need to prepare. If you use canned beans and corn, you won’t need to cook them.  Ditto for the quinoa and chicken (well, maybe they won’t be coming out of a can, but you could get them pre-cooked). I cooked my own quinoa and had Mr. Fit Armadillo prep the chicken.

Step Two: Mix it all together and what do you get?

If this isn’t one of the easiest dinners you’ve tried, I want to know your secret time-saving recipe! However, I’m pretty sure it doesn’t get much healthier than this. Right out of a nutrition plan, the nutrients are also perfectly portioned out for me (and I’m willing to bet – you, too).
