Our Swiss chard plant multiples faster than rabbits! My hubby picked a big bunch of Swiss chard this weekend so I was given the challenge to whip it up into a delicious treat.  I wanted to make it into yet another tofu recipe that I found, but figured I better save that for another week.  If you’re a tofu lover like I now am, I invite you to check out the Tofu Lasagna recipe that started my love affair with it or the Baked Tofu Hummus recipe I made last week. OK, I promised I wouldn’t make tofu two weeks in a row and here I am talking about it yet again.  Time to get to this week’s recipe so I can make another tofu recipe next week, err….so you can enjoy this week’s What’s for Dinner? Wednesday tasty non-tofu treat, Swiss Chard and Salmon Quiche.  This recipe was inspired by one I found over at All Recipes.  But, of course I changed things up to make it healthier and easier to make.

One big change I made was to use canned salmon.  Like the Swiss chard, it seems to keep multiplying in our pantry and I knew this modification would help cut back on the cook time, something I always try to do! Another fun change I made was to swap out the bread crumbs with Panko bread crumbs, becuase I recently found some at my new fave store, Big Lots.  Whenever I look for Panko crumbs, I can’t find them so I was pretty pumped. Now that I have them, I can’t find any of the Panko recipes I had saved so I just made room for them in this Swiss chard quiche, because why not?

Ready to try out my faster, healthier Swiss Chard and Salmon Quiche? Awesome! Here is everything you need to know:

Ingredients to Bake a 10-in Swiss Chard and Salmon Quiche:

Olive oil cooking spray
1/4 cup Panko bread crumbs (woohoo!)
1 cup skim milk
1 can salmon (14 oz)
1 bunch Swiss chard, chopped
1/3 cup chopped onion
1/8 tsp ground black pepper
1/2 tsp dried marjoram
1/8 tsp ground nutmeg
3 eggs

Putting it all together:

Step One: Prep time! Preheat your oven to 350 degrees Fahrenheit.  Mist a 10-inch pie plate with your cooking spray and then sprinkle your Panko bread crumbs on top.

Step Two: Cook your Swiss chard. Spray a skillet with cooking spray and heat it over medium heat. Add your onion and Swiss chard and cook it until the Swiss chard has wilted and your onions are tender.  Season your veggies with the pepper, marjoram, and nutmeg before setting them aside to cool.

Step Three: Unite the Swiss chard and salmon.  Drain any excess water out of the can of salmon and then flake it into your cooked Swiss chard and onions.  Place the Swiss chard/salmon mix into your pie pan.

Step Four: Mix your eggs and milk.  Whisk your eggs and then pour in your milk.  When they are combined,pour the mixture over your pie pan of Swiss chard and salmon to finalize your quiche.

Step Five: Cook it up! Bake your Swiss chard and salmon quiche for about 35 mins or until the eggs are fully cooked.
