What’s for Dinner? Wednesday Salmon Kale Salad with Pineapples, Apples, and Nuts
Happy What’s for Dinner? Wednesday! This week’s meal is the first one I’ve shared that I made up all by myself. The other recipes I’ve shared have been modified from ones I’ve found in my favorite magazines or from my mom and friends. So I can’t really promise that this meal will be tasty to anyone else, but I’d love for you to try it out and see what you think! The dinner I’ve created is Salmon Kale Salad with Pineapples, Apples, and Nuts. It’s light, full of flavors, and easier than pie to make!
I’m just going to jump right into this one (I don’t want you to think too much about the fact that this recipe was not created by a real chef)!
Here’s what you’ll need to serve this meal to four:
12 ounces salmon
4 tbsp soy sauce
1 lemon
8 ounces of chopped kale
1 medium apple (I used a Macintosh, but you can pick your favorite)
1 cup chopped pineapple
1/3 cup of trail mix (mine had pistachios, cranberries, almonds, and walnuts)
Honey Vinaigrette
1/4 cup apple cider vinegar
2 tbsp olive oil
2 tbsp honey
Here’s how to put it all together:
Step One: Marinade your salmon. Cover your fish with 4 tbsp soy sauce and the juice of one lemon and leave it in the refrigerator to absorb those flavors for about 1 hour.
Step Two: Cook your salmon. Heat up your broiler and cook the salmon for about 8 minutes (the exact time will depend on how thick your filet is).
Step Three: Put together the salad. Cut up your kale, apples, and pineapple and mix them and your trail mix together. Add your salmon to your salad, cutting it into bite size pieces. Finally, make your honey vinaigrette by mixing your last three ingredients together in a small bowl and then drizzling them over your salad.
And that’s it! You should be left with a tasty, healthy salad! Or at least it will be healthy. I can only guarantee that it’s tasty to my taste buds.
