Asian Cilantro Chicken
Happy What’s for Dinner? Wednesday! Since I’m hosting my first live webinar tomorrow (did you join yet? If not, register by clicking HERE 🙂 ), this week’s recipe idea had to be super easy.  My hubby wanted some chicken for dinner and when I found a recipe for Thai Cilantro Chicken I knew I had to try it.
Not only is this recipe done in practically no time, it also helped us use up some of the cilantro we had leftover from last week’s Blackened Yellowtail Snapper with Mango Salsa. A definite win-win for the food police (aka Mr. Fit Armadillo)!
Here’s what you’ll need to serve this meal to four:
4 boneless skinless chicken breasts
1/2 cup cilantro
2 garlic cloves
2 tbsp fish sauce
1 tbsp toasted sesame seed oil
How to put it all together:
Step One: Get out your food processor and put it to work! Toss all your ingredients besides your chicken into the handy machine and let it do it’s thing. This will be your marinade.
Step Two: Marinade your chicken. Pour the marinade into a ziploc back and add your chicken to the bag. Let both sit in the refrigerator for 15 mins so the flavor can seep in.
Step Three: Broil your chicken! Take your Asian flavored meat out of the fridge and cook it under your broiler. It should take 10 mins or less. Â Flip your chicken once during the cooking time so it cooks evenly.
