Mom’s Marinade: A Healthy Grilled Swordfish Recipe
It’s What’s for Dinner? Wednesday! This week I’m sharing a delicious grilled swordfish recipe that my mom used to impress my hubby earlier this month. Kidding, she’s always been a good cook! However, it definitely seems like when my husband is around she takes things more seriously. Lucky for you and me, I was able to get her to share her latest delicious recipe and I hope you’ll cook it up with me this week!
Growing up, my mom always cooked really healthy food. From the preparation (grilled instead of fried!) to the types of foods, she definitely knew how to craft a nutritious and delicious meal. Looking back on her commitment to this goal, I can’t help but see it as one of her biggest gifts to my sister and me. More and more research is showing that what moms eat while pregnant and what children eat in their early years can have a huge impact on their food preferences later in life.
When people ask me if I follow a strict diet to stay fit, I can honestly tell them no, I just eat what I like and it happens to be healthy foods! I now know a lot of that is thanks to my mom (who is now also a “mum” 😉 ). If you’re a mom to be or mom of little ones struggling with healthy eating, remember every meal you serve has the power to impact your children in a positive way. Even though fast food can be more convenient, taking the time to plan ahead and offer healthy choices consistently is a priceless gift you can give your children.

Here’s what you’ll need to serve four:
1 lb fish, preferably sword or tuna
1/4c soy sauce (opt for low sodium)
1/2c EVOO (extra virgin olive oil)
juice of one lemon
salt and pepper to taste
Here’s hot to put it together:
Step One: Whisk all of the ingredients well, all expect for your fish(!), together to make Mom’s Marinade!
Step Two: Add your fish to the liquid ingredients and let it sit to marinade for 30 mins to 1 hr. If the fish is thin, be careful! Don’t let it go over the 1 hr mark.
Step Three: Pre heat your grill so it is nice and hot and then add your fish. Mum warns, “Watch as you place the fish on the grill-the marinade will flare up and the fish will cook quickly!” Flip to ensure fish is cooked through.
Step Four: Serve it up! Enjoy this delicious, nutritious dinner idea from my mom to yours!

Given the fact that I never remember my mom frying any fish, I’m not sure where this came from. However, it’s always stuck with me! Hope it helps you find your match or at least get in a good giggle, but not while you’re eating your fish!
