An Indian Ground Chicken Recipe
This week is the third one in a row that What’s for dinner? Wednesday has been an Indian inspired dish. The first week, I tried out a Tandoori Tofu recipe, last week I cooked my husband’s Tandoori Chicken recipe, and this week I’m sharing another recipe from Mr. Fit Armadillo’s homeland: Indian Ground Chicken! What you need to Serve Indian Ground Chicken to Four:
1lb ground meat (pick lean meat, but your choice of chicken, turkey, etc)
4 cups rice (cooked)
1 cup beans (cooked to save time choose mixed or your favorite)
1/2 cup chopped onion
4 cloves minced garlic
2 bay leaves
1 tbsp garlic powder
pepper and salt to taste
1.5 tbsp ground ginger
1/2 cup chopped mint and cilantro leaves
cooking spray
Optional: Green chili and tomatoes
Here’s how to put it all together:
Step One: Cook your rice and if you’re not using cooked beans, cook those as well. Set the rice aside and season the beans with salt, garlic powder, black pepper, and ginger to taste.
Step Two: Cook and season your ground chicken (or other meat of choice). Spray a skillet warmed over medium-high heat with cooking spray and add your onion, garlic, bay leaves, green chili, and tomatoes. Simmer until fragrant.
Step Three: Add your beans to the skillet, mix all ingredients together, and add salt if needed.
Step Four: Serve your beans and ground chicken over a bed of rice (not surprising, right? you could try quinoa if you’d like 😉 )
