Super Simple Salmon Recipe
Happy What’s for Dinner? Wednesday! Since last week was a tofu recipe week, this week I wanted to switch things up. Mr. Fit Armadillo voted for a fish dish, but with it being the beginning of a new month I’ve been so busy with new clients. It’s SUPER exciting, but it means I have no time to waste in the kitchen. That’s why I’m sharing a Super Simple Salmon Recipe with you for tonight’s dinner idea.

For those of you just signing up, I’ll go over why I love this recipe. It’s super fast and done in 20 mins or less (depends on how thick your salmon is), it won’t require a big grocery store run (you probably have most of the ingredients), and it’s super tasty 🙂 . Here are the ingredients you’ll need to serve Super Simple Salmon to four:
4 (6-ounce) salmon fillets
olive oil cooking spray
2 tbsp dill (fresh is preferred)
salt and pepper
1 lemon
Optional: lettuce to make it a super simple salmon salad
Step One: Preheat your oven to 350 degrees Fahrenheit and prep your fish. Spray a baking sheet with cooking spray and then place your fish on the sheet and spray it with a layer of cooking spray as well. Next, dust your salmon with your dill and season it with your salt and pepper.
Step Two: Once that oven preheat signal goes off, pop your fish in the oven. Cook for 10-20 mins or until the fish is cooked through.
Step Three: Dinner time! Squeeze your lemon over the fish or cut the lemon into four slices for your guests to use. Place your salmon on a bed of greens or next to your favorite sides.
